Amaranth Sunrise

I absolutely love the Amaranth-ish color of this red juice recipe, and not only because the tone particularly suits my complexion.

The red pigment in fruits and vegetables comes from the natural plant pigments called phytochemicals. Red fruits and vegetables get their red color from lycopene or anthocyanins. These phytochemicals act as antioxidants and fight free radicals, helping to reduce the risk of cancer, among other benefits.

This recipe also enjoys the added health benefits of rhubarb. Rhubarb is excellent for brain health and to build healthy bones. Furthermore, rhubarb promotes skin elasticity and helps to prevent it from wrinkling or getting saggy. Who needs Botox, right?

Do not use rhubarb leaves, as these can be toxic.

If you are looking for good juicing recipes, try this one. The taste is just sweet enough, and the lime and mint give it a fresh kick.

Ingredients

Red Cabbage
¼ head

Rhubarb
1 stalk

Carrot
2 medium

Red Apple
1 medium

Lime
½ a fruit

Mint
a few sprigs

INSTRUCTIONS

  1. Wash all ingredients thoroughly under running water.
  2. Chop all ingredients into a size that best works for your juicer. Discard the apple core and seeds.
  3. Chop the rhubarb into small pieces — this helps reduce clogging or jamming of the juicer.
  4. Feed everything into your juicer, alternating between soft and hard ingredients.
  5. Enjoy!

Notes:

For full benefits, consume immediately or as soon as possible, but within 24 hours.
Store in an airtight glass bottle or jar and refrigerate.
